February 25, 2012 Gino’s Famous Segreto Sauce

To those who remember Gino’s on Lex and 61st, I’m certain you’ll recall their famous Segreto Sauce. Never would they reveal the recipe – when asked their answer was always, “come back tomorrow”. Opened in the 40s, they closed after 65 years, and the Segreto Sauce closed with them. Before that regrettable event, I persuaded friends who were coming for the weekend to do their utmost to wangle a quart container from Franco, a partner and the chef. They did, and I transferred it into four 8 oz containers to be frozen and enjoyed as a wonderful reminder. Last evening, the last one found its way to the dinner table. I wonder if it might have been the last ever to be enjoyed anywhere? If Gino’s brings back memories to you, I’d love to hear about them.

Oh my memories – so many wonderful dinners with zebras on red wall paper, happy birthday being sung by Italian waiters, dinners with my wonderful dad and Cath, a particularly special night with my husband and his cousins. As the meal was ending, but not quite over, the waiter was finishing his shift. We asked for the check, but he said, “No, Mr. Davis has picked this one up.” Thanks daddy.

My husband and I ate at Gino’s every time we were in NYC, and we miss it so much! Paglia e Fieno al Segreto was my all-time favorite. Have you been able to duplicate it? The cupcake place has probably already died.

As often as I tried, I have never duplicated Frank,the chefs wonderful “segreto” sauce. Over the years, I’ve tired…but that special taste has eluded me. When I “pleaded” with my favorite waiters, their response, as if rehearsed was” Mr. Davis, come back tomorrow”. A Gino cookbook would be a grand treat.
